Everything But The Bagel Seasoning Salad Dressing

Low Carb | Keto


Ingredients:

1/4 to 1/2 cup water

6 ounces cream cheese, softened

3 tablespoons mayonnaise

1 1/2 tablespoon white wine vinegar


Directions:

Pulse the water, cream cheese, mayonnaise, vinegar, in blender until smooth. (Note: start with 1/4 cup of water and if too thick, add more water up to 1/2 cup). Pour the dressing into a small bowl, and stir in Everything But The Bagel Seasoning. Refrigerate, covered, up to 3 days.

For those following a low carb or keto diet, you probably have heard of "fathead" pizza dough. It's the craze for us low-carbers. The dough is magical. It contains no flour or yeast. Yep that's right, no flour! The dough is basically made from mozzarella cheese. It's genius! There are many variations of this magical dough. There are two variations that I really like. This is one I discovered recently on Instagram, the difference on this variation, is that is uses baking powder. The baking powder, in my opinion gives it a lighter texture due to it "puffing up" the dough a bit when baking. Give it try. Trust me, you will like. You can even test it on your carb eating friends and family.


The dough is made in the microwave by melting the mozzarella cheese and then adding the other ingredients, mix it well, form a dough ball, roll it out, make your pizza. I can't be any simpler. There's not rising time so it's ready to use right away.


Here I made a mushroom, onion, anchovy pizza. A new combination for me, which I REALLY liked! But you go ahead make whatever pizza you like. All you need to do is pre-bake the pizza dough, add your favorite sauce, cheese, toppings, and bake.

Low Carb Keto Friendly Pizza Dough

Adapted from the original Fathead Dough: Cooky's Creations

Makes 1 large pizza, 10 slices


Ingredients:

10 oz Mozzarella Cheese

1 tsp Baking Powder

1 Egg


To make Dough:


Directions:

In a small bowl combine almond flour and baking powder. Set aside.

Place the cheese in a med bowl; microwave in 30 second intervals, stirring each time, until the cheese is melted.

Remove bowl from microwave, add the almond flour mixture and egg. Keep mixing with a spoon (you may need to dig in with your hands for the mixing) until a ball forms. It will be sticky at first, just keep mixing and kneading.


To make Pizza:


Directions:

Preheat oven to 350 degrees.

Place dough on parchment paper and roll with a rolling pin. Roll it very thin, approximately 1/4 inch thickness. You can shape the pizza in round or rectangular form.

Place dough on pizza pan or cookie sheet (leaving the dough on the parchment).

Pre-bake for 8 minutes.

Remove dough from the oven. Top with sauce, cheese, and toppings.

Place back in the oven and bake until cheese is melted.

This simple no-cook quick pizza sauce makes for a great pizzeria tasting pizza. It's made with just a few ingredients and requires no cooking. If you are going to make homemade pizza it's totally worth making a homemade sauce. You can adjust the seasonings to your liking. I list what spices I like to use, but feel free to change it up in any way you'd like. There are no added sugars to this sauce (like many pre-made sauces) so it is definitely low carb and keto friendly (1.5g net carbs per serving).


The great thing about this sauce is you don't have to cook it. It cooks right along with your pizza. If you have time to make ahead the flavors will meld together. But if not, it is just as good made right before assembling your favorite pizza. What is your favorite pizza? I like some many varieties of pizza, taco pizza, mushroom pizza, anchovy pizza, onion pizza, kale & pesto pizza. You name it like it!

My Favorite Pizza Sauce

Makes 8 servings (for 1 very large pizza cut into 8 slices)


Ingredients

1 (6 ounce) can tomato paste

1 cup water

1/4 cup extra virgin olive oil

2 cloves garlic, minced

1/2 tablespoon dried oregano

1/2 tablespoon dried basil

1/2 teaspoon dried Italian seasoning

salt to taste

ground black pepper to taste


Directions:

Mix together the tomato paste, water, and olive oil. Mix well. Add garlic, salt and pepper to taste, oregano, basil, and Italian seasoning. Mix well and let stand several hours to let flavors blend. No cooking necessary, just spread on dough.
