These Blue Cheese Stuffed Mushrooms are for the ultimate blue cheese lovers. They are packed with flavor and make an excellent appetizer. Each mushrooms is filled with a delicious combination of blue cheese, cream cheese, Parmesan cheese, chives, and almond flour. They are an incredibly rich and decadent appetizer that are the perfect party finger food everyone will love.
White Button Mushrooms are stuffed with a combination of almond flour, Parmesan cheese, cream cheese and chives. Simply mix the the stuffing ingredients and fill each mushroom.
Top the stuffed mushrooms with a few more chives.
Drizzle with butter and bake.
Blue Cheese Stuffed Mushrooms
12 oz package white button mushrooms
3 oz good quality blue cheese, crumbled
2 T almond flour
1 T parmesan cheese
1/2 t freeze dried chives (you can use fresh)
3 to 4 T butter, melted
Directions:
Preheat oven to 350 degrees F.
Combine blue cheese with chopped chives and stir in bread crumbs. Fill mushrooms with cheese mixture and place in a baking dish or pie plate. Melt 3 to 4 tablespoons of butter and drizzle over the mushrooms. Bake at 350 degrees for approx 20 minutes.
Note: for juicier mushrooms, I add a few tablespoons of water to the baking dish prior to baking
