These homemade low carb Everything Crackers are crisp, delicious, and are incredibly easy to make with just a few ingredients. These flavorful gluten-free low carb crackers are perfect for a quick snack. They are wonderful served with cream cheese, tasting just like an everything bagel topped with cream cheese. Bring it to the next level, and top my Tomato & Onion Chia Seed Jam. As an alternative, when making these you can leave plain, with no toppings or you can top with sesame seeds, poppy seeds, coarse sea salt, caraway seeds, dill, cracked black pepper, Parmesan cheese, rosemary, etc. Season them with your favoring flavors. You can add in your favorite seasonings right in the dough. When making these I add in sesame seeds right into the dough giving them a little more depth in flavor.

Ingredients:

1 3/4 cups finely ground almond flour

1 large egg

1/4 teaspoon salt

1/2 teaspoon freshly ground black pepper (optional)

1 tablespoon butter


Top Options: Everything Seasoning, sesame seeds, poppy seeds, caraway seeds, dried dill, coarse sea salt, cracked pepper pepper. rosemary.

Preheat the oven to 350°F.

1. Whisk together the egg, salt, pepper, and any additional spices or add-ins *

2. Add the almond flour, stirring until a dough is formed.

3. Place the dough onto a sheet of parchment paper, pat out into a rectangle, and top with an additional piece of parchment. With a rolling pin, roll the dough out to about 1/8" thickness; it should be about 10" x 12", or larger.

4. Remove the top parchment paper, and use a pizza cutter or knife to cut 1" squares. Move the cut crackers, along with their parchment, to the baking sheet.

5. Place the butter in a small bowl and microwave until the butter melts.

6. Brush the squares with the melted butter. Add toppings (Everything seasoning, etc.). to the squares.

7. Bake the crackers for 14 to 16 minutes, until they're light golden brown. Note: check the crackers as they are baking. Some may start to brown before others. If so, remove the baking sheet from the oven and transfer those that are already cooked to a cooling rack. Place the baking sheet back into the oven and continue to bake the remaining crackers. Remove the crackers that are starting brown first and place on cooling rack. 8. Cook crackers completely before serving.

9. Crackers can be stored in an airtight container and left at room temperature for storage.

Tips: * For seedy crackers, add in 1 to 2 tablespoons of sesame or poppy seeds seeds right into the dough.

* For cheesy crackers, add 2 tablespoons of Parmesan cheese right into the dough.
