Faux Corn Muffins | Low Carb | Keto

These “corn” muffins are made with no corn. You will be happily surprised when you bite into these muffins and think you are eating the 'real' thing. They make a great accompaniment to a hot bowl of low carb chili. salad, or a soup (such as this green bean soup, or wedding soup). Don't forget to serve with butter. Or better yet serve, with a flavored butter such as a "honey" sage butter. They are real simple to make and are only 2.4g net carbs each. You have the option of keeping them savory or you can sweeten them up with your favorite sweetener.


Serve warm with a pat of butter .. and mmm mmm good!

Ingredients: 1 cup Almond Flour, find ground 2 Eggs 4 Tablespoon Melted Butter 4 Tablespoon Heavy Whipping Cream 2 Tablespoon Mayonnaise 1 teaspoon Baking Powder

10 drops Corn Bread Flavored Liquid Concentrate a pinch of Salt (a scant 1/8 teaspoon) If you like the muffins to be sweet, add a little Swerve or other sweetener (to taste)

Directions: 1. Preheat oven to 350 degrees 2. In a medium bowl, combine the almond flour, baking powder, and salt. 3. In another bowl add the cream, mayonnaise, and eggs, corn bread flavoring, stir to combine.

3. Add the flour mixture to the wet ingredients. Mix just until combined (a very light mix, don't over mix). 4. Fold in the melted butter to the mixture, and mix just until combined. 5. Prepare a muffin pan (using wrappers or spray with coconut or other cooking oil) 6. Divide the batter among 6 muffin tins. 7. Bake for 15-18 minutes until edges are slightly browned and a toothpick in the center comes out clean.
